Ingredients

  • 1 (5–6 lb) bone-in prime rib roast
  • 2 tbsp olive oil or softened butter
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp chopped fresh rosemary (optional)
  • 1 tbsp chopped thyme (optional)

Equipment

  • 1 Roasting pan with rack.
  • 1 Meat thermometer (preferably digital)
  • 1 Sharp carving knife
  • 1 Aluminum foil.
  • 1 Small bowl for seasoning mix.

Method

  1. Preheat the Oven:- Prep your oven to 450°F (230°C).. It is possible to refrigerate the roast an hour before serving it.'
  2. Prepare the Roast:- The roast can be dried using paper towels. The area can be wiped with olive oil or butter. Add garlic powder, rosemary and thyme to a bowl and keep it. Spread the mixture over the roast.
  3. Roast at High Temperature:- Place meat on a rack and roast it bone-side down before placing it into the tin. Roasting for 20 minutes at 450°F will result in the formation of a crust
  4. Reduce the Temperature:- Put the roasting pan in oven and bake for 1.5-2 hours until internal temperature is 325°F (165°C).
    120°F for rare.
    130°F for medium-rare.
    140°F for medium.
  5. Rest the Roast:- Discard the foil from the oven and tent. Let it rest for a period of 30 minutes before carving. This allows juices to redistribute.
  6. Carve and serve:- Divide the meat into two equal parts and serve. Feature it with horseradish cream, au fruit or side dishes of choice. Enjoy

Notes

Make sure to use a meat thermometer to cook the prime rib until it is perfectly cooked. During cooking at room temperature, it's crucial to allow the roast rest so it can be cooked perfectly and taste tender inside. Care must be taken with caution in this step. To create a more herbivorous taste, you can use crushed garlic cloves or additional fresh herbs in the roasting pan. Leftovers are a great option for sandwiches or paired with savory beef and barley soup.
