Ingredients
  

  • 2 tbsp olive oil
  • 1 (lb) ground beef (80/20 recommended)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can crushed tomatoes
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper to taste

  • 1 Large Dutch oven or heavy-bottomed pot
  • 1 Wooden spoon. 
  • 1 Measuring cups and spoons 
  • 1 Can opener. 
  • 1 Ladle. 

Method
 

  1. Sauté Aromatics:- In a medium saucepan, heat olive oil until golden. In a 5-minute timeframe, fry onion until it is diced and softened. Then, simmer the minced garlic for another minute. 
  2. Brown the Beef:- With a spoon, add the ground beef and cook until it's golden brown. Drain excess fat if needed.
  3. Add Spices and Tomatoes:- Mix together chili powder, cumin, paprika (if you prefer), cayenne, salt, and pepper. Set aside. Mix well. Combine tomato paste, beef broth, and crushed tomatoes. Bring to a simmer.
  4. Add Beans and Simmer:- Combine kidney and pinto beans. Set it aside. Bring to a boil and leave unaided for 30-40 minutes, stirring occasionally until foam forms
  5. Rest and Serve:- Keep the chili aside for 10 minutes. Optional toppings like shredded cheddar or sour cream are included with the meal. 

Notes

Quality beef and freshly ground spices are the key, resulting in an authentic taste. The cayenne pepper can be increased or decreased in temperature. Lowering the simmer time of the chili also enhances its flavor profile. Better the next day, it's great for leftovers or meal times. This recipe can be served with cornbread, tortilla chips or baked potatoes for a hearty meal.
